Buffalo meat is similar to beef. Cooked properly, buffalo
is very tender. The key to cooking buffalo is LOW & SLOW! Low heat and
cook slowly. Buffalo is very low in fat and will cook in half the time of
beef. The best steak is cooked medium rare; never past medium. Overcooked
meat will be dry and tough.
Our buffalo meats are trimmed very closely. Still, we
recommend that any white vein or gristle be trimmed out before cooking.
